Best new hotel
Why we love it: The newest luxury addition to the island, the Mondrian is located in the stunning Cala Llanga region on the east coast. Incredibly chic – just like its other outposts – the interiors scream ‘quiet luxury’, with minimal design and impeccable art. There are three gorgeous ocean-front swimming pools to choose from, with striped daybeds and sun loungers dotted at a discreet distance from each other – no overhearing your neighbour's most intimate secrets here. Service is attentive and friendly, and despite having 400 rooms, the hotel somehow manages to feel ‘boutique’. During the preview season we wiled away the hours ordering copious wellness shots, juices and cocktails from the pool bar, occasionally ambling down to the beach. Everything you could possibly want is on site, including seven restaurants and bars (Japanese sushi spot Niko is the most highly anticipated), but if you do fancy a change of scene, there's a direct ferry to Formentera.

Best new boutique hotel
Why we love it: The Mondrian's little sister hotel, located on the same site and sharing several of the facilities, is the boutique Hyde. With a laidback pool scene, the aforementioned plethora of restaurants, private beach and ferry to Formentera, it's got a lot to recommend it. So what makes a stay here different to its older sibling? Hyde is targeted towards younger guests with less cash to spend, with smaller rooms – albeit just as chic. Its tagline is, “the freedom of a festival in a hotel,” which is pretty apt, to be honest: it also suggests pre-drinks parties hosted in your room, and who are we to disobey?

Why we love it: Arriving in the hippy heartland of the north of the island in 2021, Six Senses Ibiza is a natural fit for the White Isle’s spiritually-inclined tourists. Just 20 minutes from Ibiza Old Town, you’re a world away from the hubbub of the clubbing strip, with shoulders visibly relaxing as soon as you pull up to the grand, expansive property. Set within its 20 acres are 137 spacious rooms, as well as suites and villas, many with sea views. Food-wise, you’re spoilt for choice (and naturally, there’s a farm-to-table ethos across eateries): seasonal Israeli cuisine at North restaurant; Japanese at live music venue The Beach Caves; an Italian trattoria-inspired menu at The Orchard; and Spanish at La Plaza. Why we love it: This 19th century Relais & Chateau property was a family manor for generations until it was converted into an opulent yet welcoming hotel. Why we love it: Just a short water taxi ride across the bay from the Port of San Antonio is Amàre Beach Hotel Ibiza. Located directly on the beach in the peaceful Bou Cove, it’s the perfect place to holiday with friends or a partner as the hotel has a modern adult-only concept. Beautifully designed, it’s got everything you need within the complex, including two stunning pools, sunbeds for days, restaurants, a rooftop bar, a poolside DJ, a gym and of course, the beach. The poolside service is absolutely 10/10: just press a button at your sunlounger and a waiter will appear to take your order as if by magic. We’d recommend the poké bowl washed down with an Amàre special cocktail. The hotel has a great vibe about it: everyone is having fun, guests are all getting to know each other, the staff are the friendliest around and people are down to party all day long. Best affordable stay
Why we love it: Just around the corner from San Antonio, set amongst the rugged dunes of the super private Cap Negret, lies Hostal La Torre, a former hostel, restaurant and bar that has been given a serious makeover.
